Cake Types & Fillings
We can make any flavour you wish – some popular flavours are detailed here.
Vanilla Sponge
A classic light sponge flavoured with vanilla extract, traditionally filled with seedless raspberry jam and vanilla buttercream. It stores up to 1 week from receipt.
Chocolate Sponge
A scrumptious chocolate sponge traditionally filled with chocolate butter cream. Alternatively it can be filled with chocolate ganache which is a gooey chocolate and cream icing – choose from white, milk or dark chocolate. It stores up to 1 week from receipt.
Citrus Sponge
A light citrus sponge flavoured with fresh lemon or orange. It can be either filled with lemon curd and lemon buttercream or orange buttercream. It stores up to 1 week from receipt.
Traditional Dark Fruit Cake
A dark fruit cake made with the best dried fruits, cherries and spices steeped in brandy. Our cakes are kept in a cool place and are regularly drizzled with brandy to produce a well rounded rich moist fruit cake that slices well and tastes wonderful. If you are not keen on alcohol we can miss it out and steep your fruit in fresh orange juice.
Fruit cake is a good base for all wedding cakes. If you wanted to keep the top tier to become the traditional christening cake - then this is the cake we would strongly recommend. For your piece of mind the traditional fruit cake can be collected or delivered several days in advance of your celebration.
Ideally a rich fruit cake needs to be made 6 months before the event; this gives the cake time to mature, and ensures that the flavours and textures reach their peak! Of course we can make fruit cakes on shorter timescales - but the longer the better.

Orange and Carrot Cake
A lightly spiced carrot sponge traditionally filled with orange butter cream. Ideal if you’re not too keen on the traditional fruit cake but want something a little heartier than a vanilla sponge cake
Please note wedding cakes are available in the above flavours, however not all designs are possible with sponge bases. Check with us - we will always be able to suggest a way to fulfil your dream!
Cake Coverings
Marzipan. Marzipan is traditionally used to cover fruit cakes before icing. To make a sponge cake extra special it too can be covered in marzipan prior to being iced. Marzipan is made from ground almonds.

Sugar Paste / Fondant Icing. This a very popular form of icing made with icing sugar and gelatine. It is soft icing that can be used to cover cakes and is used to make moulded characters and flowers. The possibilities of what can be made with sugarpaste are endless. This icing can be coloured to match wedding outfits, flowers or party invitations.
Cocoform Chocolate Icing. A delicious chocolate roll out icing (white, milk and dark) made from pure Belgian chocolate and glucose. It is not as sweet as sugar paste and can be used to cover cakes or to make figures and flowers. It can also be mixed with marzipan to make a mouth watering chocolate marzipan. Chocolate marzipan is particularly suited for use on chocolate wedding cakes.

Chocolate. Real chocolate icing is luxuriously rich. There are many ways of making it, depending on how chocolatey you want your cake to be. One option is to have chocolate curls for the peak of sophistication, a high quality chocolate cake for the focal point of your celebration.
Buttercream. Made with butter and icing sugar beaten together with vanilla extract, cocoa or a flavouring of your choice. It can be used to cover cakes and it gives a textured finish. It is used as a filling for sponge cakes.
Royal Icing. A past tradition was to use royal icing to cover wedding cakes. Each tier of the cake would have several layers of royal icing to achieve a hard flawless finish onto which more intricate designs were iced. Sugarpaste is now more popular and royal icing tends to be commonly used to write messages and to add details to cakes. It is made from icing sugar and pasteurised egg white.

If you have any special dietary needs, with your help we will aim to meet them. e.g. gluten free, fat free, egg free, dairy free…..
Nut Allergies
Our sponge cakes are made without nuts however we cannot guarantee they are nut free. Our fruit cakes do contain nuts and marzipan is made with nuts.
